Italian-Style Baked Sea Bass

Ingredients:
2 whole sea bass, cleaned and scaled
4 cloves garlic, minced
1 lemon, thinly sliced
1/4 cup olive oil
Fresh parsley, chopped
1/2 cup dry white wine
10 cherry tomatoes, halved
Salt and freshly ground black pepper
Fresh rosemary sprigs
Instructions:
Preheat Oven: Preheat your oven to 200°C (390°F).
Prepare the Fish: Rinse the sea bass under cold water and pat dry with paper towels. Make three shallow slashes on each side of the fish to help flavors penetrate.
Season the Fish: Rub the fish inside and out with olive oil, garlic, salt, and pepper. Insert lemon slices and a sprig of rosemary inside each fish.
Arrange in Baking Dish: Place the fish in a baking dish. Scatter cherry tomatoes around them, and pour the white wine over the fish.
Bake: Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for another 10–15 minutes, until the fish flakes easily with a fork.
Garnish and Serve: Sprinkle with fresh parsley before serving. Serve with crusty bread or a side of roasted potatoes.
