Italian-Style Baked Sea Bass

Ingredients:

  • 2 whole sea bass, cleaned and scaled

  • 4 cloves garlic, minced

  • 1 lemon, thinly sliced

  • 1/4 cup olive oil

  • Fresh parsley, chopped

  • 1/2 cup dry white wine

  • 10 cherry tomatoes, halved

  • Salt and freshly ground black pepper

  • Fresh rosemary sprigs

Instructions:

  1. Preheat Oven: Preheat your oven to 200°C (390°F).

  2. Prepare the Fish: Rinse the sea bass under cold water and pat dry with paper towels. Make three shallow slashes on each side of the fish to help flavors penetrate.

  3. Season the Fish: Rub the fish inside and out with olive oil, garlic, salt, and pepper. Insert lemon slices and a sprig of rosemary inside each fish.

  4. Arrange in Baking Dish: Place the fish in a baking dish. Scatter cherry tomatoes around them, and pour the white wine over the fish.

  5. Bake: Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for another 10–15 minutes, until the fish flakes easily with a fork.

  6. Garnish and Serve: Sprinkle with fresh parsley before serving. Serve with crusty bread or a side of roasted potatoes.
